The Hotel and Restaurant Management A.A.S. program prepares students for direct employment in the hotel and restaurant industry. Students gain theoretical and hands-on experience related to hotel and restaurant management, qualifying them to assume a variety of roles in the hotel and restaurant profession.

Program Learning Outcomes

  • Students will articulate the scope, structure, and significance of the hospitality and restaurant industry, recognizing its impact on local and global communities and its role in fostering inclusive and equitable guest experiences.
  • Students will evaluate historical developments and emerging trends in hospitality and restaurant management, applying innovative thinking to adapt to evolving industry demands and diverse customer expectations.
  • Students will demonstrate core competencies in hospitality operations, including leadership, service excellence, and ethical decision-making, preparing them for dynamic roles in a variety of hospitality settings.
  • Students will utilize current technologies to enhance communication, collaboration, and professional presentation skills, supporting effective engagement with diverse audiences and stakeholders.

Students will be required to comply with the dress and sanitation requirements of the American Culinary Federation.

Note: The only jewelry permitted in cooking laboratories are wedding rings. No nail polish or fake nails are allowed. Full uniform attire is required for any food preparation activity in all labs at all times. See the complete Policies for Food Laboratories.

Each Hotel and Restaurant Management major must satisfy a work experience requirement of 600 hours, or its equivalent, in the hospitality industry. Details may be obtained from the Dean of the School of Hotel, Culinary Arts and Tourism.

For interested students, there is a Beverage Management Concentration within the Hotel and Restaurant Management degree program.
